The chicken is breast cut roughly 1in. Thick. Then soaked in egg wash rolled in flour then back in wash and a another round in flour before a trip to the deep fryer. The wash is 8 eggs and 1/4 cup of milk. This time I just used plain old flour. Let the chicken soak about 10min in the wash each time.

I like to make them spicy to I add a bottle of Texas Pete and cayenne pepper to the wash. Soak chicken for 1hr. In wash then batter twice only soaking a few minutes for the second time. I also add cayenne, black pepper and little garlic powder to the flour.
