London Broil

Post by bobwhite »

Cooked one on the grill this afternoon and it turned out mighty tasty. Pretty good piece of beef for $14.

It's just a thick cut of sirloin or round steak. Gotta be careful not to get it too done or it will be tough. I cooked this one to about 135 degrees internal temp and let it rest for 20 minutes. Sliced it against the grain and it was tender and juicy.

Yep that appears to be the perfect amount of pink.
Given the option, I'll always choose undercooked rather than overcooked. If a waitress ever asked me how I want my prime rib, I'll get up and walk out. There's only one way to prepare prime rib. Any chef who cooks it beyong rare ain't no chef.
